Not sure why the name of the recipe has 'impossible' di tengah tu but it is 'possible possible', macam dialog arwah AR Tompel dalam DoReMi, nak buat pie ni. Bila tengok resipi dalam majalah The Australian Women's Weekly keluaran bulan Jun 2011 terasa teruja nak buat, gambar pie yang ditayang dalam majalah tersebut nampak sedapppp. Bahan yang diguna pun tidak banyak dan tidak remeh membuatnya....so why not? Saya yang memang bukan ahli masak memasak ni pun boleh buat ikut resipi ini kalau yang sudah pakar dan ada pulak blog masakan sendiri apatah lagi kan?

Description of this pie in the magazine goes like this...
"This dessert is so simple to make. It has a bit of crust at the bottom, creamy custard in the middle and a crunchy sweet coconut top"The recipe goes like this:
Coconut Impossible Pie
Serves 6-8 Prep and Cook Time 45 minutes
4 eggs
1 cup (220g) caster sugar
2 teaspoons vanilla extract (I used vanilla essence...cari satu supermarket pun mmg tidak ada yg extract ni)
125g butter, melted
2 cups (500ml) milk
1/2 cup (75g) plain flour
1 cup (80g) dessicated coconut
1 teaspoon grated lemon rind (terlupa nak beli lemon so tak gunalah)
flaked coconut, toasted, for serving (ni pun tak ada)
1. Preheat the oven to 180 deg. C (160 deg C fan-forced)
2. Beat the eggs and sugar in a medium bowl with an electric mixer until pale and fluffy. Add the vanilla, butter and milk; beat until combined. Stir in the flour, coconut and rind.
3. Pour the mixture into a greased 6-cup capacity ovenproof dish. Bake for about 35 minutes, or until top is golden and puffed.
